When talking about “steak”, the vast majority are referring not to all red meat in general, but to beef from cows. Further, steak typically alludes to specific cuts and preparations, such as strip, sirloin, porterhouse, rib eye, and so on. If it’s being baked, stewed, braised or made in some other way, it is not usually called a steak, regardless of whether the anatomical part of the animal overlaps. Each cut has somewhat various properties based on its composition and structure, and various kinds of cooking will yield the best results for various cuts. In almost all cases, cooking a steak to well done will produce objectively poorer results in terms of texture, flavor, aroma, and juiciness. While there might be slight variation in the ideal cooking temperature for different cuts, different breeds, diverse cooking methods, etc, nobody can think of a single sort of steak that is objectively better well done. There are many other cuts of meat (for example, short rib, brisket, etc.)
